Veg Pulao

(Note : tsp stands for table spoon)

Ingredients

  • Basmati Rice-1 glass,
  • Water-1 1/2 glass,
  • Cauliflower-1/2 cup,
  • Carrot-1/2 cup,
  • Beans-1/2 cup,
  • Coriander leaves-1/4 cup,
  • Green chilli-2,
  • Onion-2,
  • Potato-2,
  • Green Peas-1 cup,
  • Cashew-1/2 cup,
  • Sugar-1 tsp,
  • Salt,
  • Turmeric Powder-1 tsp,
  • Ghee-3 tsp,
  •  Bay leaves-2,
  • Cinnamon-2,
  • Cumin Seeds-1 tsp,
  • Cardamom-2,
  • Cloves-5 and
  • Star flower-1

Method

  • First wash Basmati Rice
  • Add 1 glass water and leave it for 15 minutes
  • Now heat ghee in cooker, add cashew and fry it then remove it
  • Add cumin seeds ,star flower, cloves, cardamom, cinnamon, bay leaves
  • Add green chilli and onion
  • Cook for 2 mins on medium flame
  • Add potato, cauliflower, carrot, beans
  • Mix it and cook for 2 mins on medium flame
  • Add green peas and 1 tbs turmeric powder
  • Mix it and cook for 2 mins on medium flame
  • Now add soaked rice, mix well and cook for 1 min
  • Add 1 and 1/2 glass of water, salt and sugar
  • Sugar is optional
  • Add fried cashew and mix it
  • Close lid of pressure cooker and cook it on high flame till one whistle
  • Now keep the flame medium and cook for 2 minutes
  • Turn off the flame and let it cool down
  • Open the lid
  • Add coriander leaves
  • It's ready, Enjoy
